1. Broccoli veloute, forest mushrooms.
Roasted beef bone marrow, parsley and shaved fennel salad.

2. Bluenose bass (kick his ass seabass!), artichoke barigoule, barigoule jus, pea tendrils, pea coulis.
Roast top sirloin of lamb, potatoes, cippollini, rapini, lamb jus.

3. Creme caramel.
Cabot creamery clothbound cheddar, Moroccan sweet potato jam, toasted hazelnuts.
