Menu: week of December 27th

First course: Smoked Fiji albacore, creme fraiche, egg, pickled onion OR sunchoke veloute, espuma, nettle.
Second course: pan seared local halibut, weiser farms carrots, lentils, beurre blanc, OR duo of nimanranch pork, apple, kale, potato, jus.
Third course: cheese OR pear tarte tatin a la mode.
